During the September hop harvest in Yakima, USA, Portland brewers repeated one rule over and over. We just implemented it - and while brewing our version of the West Coast classic, our hand didn't shake. We put an incredible amount of aromatic Mosaic™ hops into the kettle - almost all of it during the last 15 minutes of boiling. What does it matter.
