Metaphore Here and now: Cherry 2022 - 75 CL

Representing the constant and productive tension between untamed nature and human refinement, this beer displays a careful expression of the local terroir and the spirit of the seasons, while showcasing the proud qualities of the finest fruit. It consists of a mix of beers that are chilled under the stars, fermented spontaneously and matured for one, two and three years in oak barrels, combined with local organic sour cherries. It is made entirely from local organic ingredients, little tribute to local agriculture, shaped by a graceful hand of time. This vintage is finally a mix of three seasons of beer making and two seasons of fruit harvesting from an organic cherry orchard in South Bohemia. I'm very proud of this because I finally have enough mature and aged beers to make richer blends packed with fruit. It has lots of deep cherry flavors, lots of spice, nutmeg, cinnamon, vanilla and mulled wine-like character. Meanwhile, he has a lot of energy and clarity, making him an easy drinker.
