Chilled and spontaneously fermented beer in oak barrels for 16 months and further matured on organic local apricots for 12 months. Once again, a different and unique vessel with a distinctive and self-contained character. In this one I try to capture the unique essence of one day in a beer and an imprint of the local terroir and in layers of hand-picked apricots from a local orchard. Several old apricot varieties give a very complex expression of the fruit and long-term ripening ensures a deep, rich taste. The backbone of a beer is once again built on local organic barley malt and raw organic spelt sourced from the local Hare Krishna community, where they have been living and functioning in a low intervention and organic way for the past 3 decades.
