Trouble in paradise! A frivolous lady comes on stage. It is a young lady that has been aged for more than a few months in oak wine barrels, giving it a deep but softly bitter tannic aftertaste. The taste is full and complex because the brewers have applied controlled acidification during the maturing process. The Mam'zelle is originally a blond beer. The ripening gave her a soft red glow. This is why she is called 'high blonde'. The alcohol percentage is 8.5 vol. Brewers claim she is 'indomitable'.
