Blend no. 73 • bottling date: 13/05/19 • number of bottles: 726 For this fruit lambic, the brewers barrel macerated sour cherries on a previous barrel of macerated strawberry lambic (seen in the ToF IX.viii). The ratio is 55% strawberries and 45% sour cherries, while the final intensity is 624 grams of fruit per liter of finished fruit lamb. Additional maceration lasted another 6.5 months. Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of experimental brews, barrel maturations, fruit macerations and/or blends in small batches. This 9th version features a series of strawberry maceration iterations that aim to balance the intense fruitiness of strawberries with the subtleties of traditional lambic, while minimizing the unpleasant phenolic properties of the small seeds.
